What Is Olive Oil

Is it just a fat? No, it is so much more. Olive oil has played an important role in the development of civilization. The production of olive oil by the ancients was due to its many uses, but especially for its spiritual and religious values. Olive oil is a symbol of peace and tranquility. The most common use of olive oil is as a cooking oil, but it also has a lot of uses as a cosmetic oil and natural medicine.

A well-made olive oil will be a deep color, like dark brown or black. It will have a clean and delicate scent. It will be smooth and unctuous. It will have a viscosity that is rich but not heavy, with the perfect balance of moisture and viscosity.

Production

The harvest of olives begins in October, when the olives are black. They are picked by hand into large trays and left on the ground or piled up in orchards to soften for a few days. In the meantime, olives must be processed to extract the oil, or for other uses. The trees are then manually pruned and their branches are trimmed away until they are left with no more than a trunk, but still enough to provide good shade. The olives are moved to processing tanks and left there to dry. Then the olives are left to ferment in big vats. Finally, the oil is pressed and the byproduct is used for food and feed.

The taste depends on how fresh the olives are, and how long they have been left to ferment.
